Peanut and Squash Soup

This peanut and squash soup comes from Amazon's new food blog Amazon al Dente. That seems to me a strange place to find a really good recipe, but this soup was really, really good. It's a great fall recipe.

I prepared the dish nearly as written in the recipe, but instead of reduced-fat creamy peanut butter, I used natural, organic, unsalted, crunchy peanut butter. That was just because that was what I had on hand. The peanut chunks in the butter were not at all bad in the soup. Also, the printed directions suggest sautéing the squash cubes and spices right at the beginning with the onion and garlic. This went against the grain so I sautéed the onions alone for a full minute, added the garlic, then added the squash and spices for the rest of the five minutes. This will have given the onions a hotter initial cooking which would have sweetened them and probably helped make up for the fact that I used regular yellow onions instead of a sweet variety as specified. I've been using sweet white onions most of the summer because that's what's been grown locally, but those have given way to yellow onions - probably until next year.

This one is a keeper. Most of my favorite recipes exist either in my cookbooks or my head. I may need to indulge in the cliché of a recipe box. I do recommend this particular recipe and my discovery of it will have me reading Amazon al Dente faithfully for at least a couple of months even if nothing as good shows itself again.
